Achiras: bizcochos del Huila
El bizcocho de achira o simplemente achiras es un amasijo que se hace con el almidón de achira o sagú (Canna indica), que es una planta de origen sudamericano usada por los pueblos prehispánicos de Perú y Colombia, al cual se le agrega cuajada fresca, mantequilla y yemas de huevo para, luego, hornearse, dando como resultado una deliciosa galguería, que usualmente se acompaña con una taza de aguapanela caliente.
Este amasijo hace parte de la tradición gastronómica colombiana y la encontramos principalmente en el departamento del Huila, aunque también en Cundinamarca y Tolima. La planta con la que se produce la harina prospera en el clima templado del sur del Cauca y Nariño, es en las tierras cálidas del Huila, en los municipios como Altamira, Fortalecillas, Timaná y Yaguará, donde se encuentran las mujeres bizcocheras que fabrican estos deliciosos bizcochos y que es el sustento de miles de familias en el sur del país.
El programa Sabor a mi (2001), de la mano del presentador Oscar Álvarez, hizo un recorrido por el departamento del Huila, donde nos da a conocer el proceso de elaboración de las achiras, a través del relato Jovita e Irma, dos bizcocheras del municipio de Yaguará.
